TOASTED COCONUT & PINEAPPLE BRUSCHETTA

Ingredients

1/2 brick (125 g) cream cheese, softened
1/2 packet Tropical Paradise Dip & Dessert Mix
1/4 cup crushed pineapple, well-drained
1/3 cup toasted coconut
8 baguette bread slices, ½" thick
1 Tbsp. olive oil
Pineapple chunks

Instructions

Combine cream cheese and Tropical Paradise Dip & Dessert Mix until combined, add crushed pineapple and half of the toasted coconut; set aside. Preheat oven to 400°F. Place baguette slices on a baking sheet and lightly brush with olive oil. Bake until just starting to turn golden, about 5 minutes (do not over-bake). Cool and spread with dip mixture. Top with pineapple chunks and remaining coconut.
